i didn't set foot outside at all today, other than to throw out the trash. temperature was in the 40's, 20 degrees colder than yesterday. for lunch i microwaved a burrito, then spent the day listening to patriots coverage after last night's game and retroactively refilling some empty blog posts from last week.

instant pot century egg
& pork bone congee
(3-6 serving)

2 lbs. bone-in spare ribs

3/4 cup short-grain rice
6 1/2 cups water
ginger, julienned

1 tsp salt
1 tsp sesame oil
1/2 tsp ground white pepper
1 tbsp cooking wine

1 century egg, chopped
3.5 oz. package pickled radish
scallions, chopped


blanch pork in boiling pot of water for 3 minutes. add rice, water, ginger, salt, sesame oil, ground white pepper, and pork to instant pot and cook on high pressure for 35 minutes. let cool (natural release) for 20 minutes before venting remaining pressure. remove pork, discard bone, shred meat, return to instant pot. add chopped century egg, medium sauté to thicken congee. once desired consistency reached, serve with pickled radish and scallions.

for dinner i made some century egg pork bone congee with the instant pot. even though it's relatively easy to make, i always forget how long it takes to cook, and i didn't eat until almost 9pm even though i started cooking at 7pm. afterwards my face felt flush as i was engulfed in the warmth of a hardy meal.

i renewed my parking permit tonight. i don't remember doing this in the past, but they had me upload a copy of my utility bill to prove i was living at the address. after i paid, the website said it'd take 5-7 weeks to receive my permit. i really have no idea why it'd take that long. the speed of bureaucracy i suppose.
