i tried my hands at making chicken pot pie tonight. i added way more ingredients than the recipe called for, including a whole potato (chopped into cubes, about 2 cups) and a cup of onions (recipe called for just half), so the pie sort of bulged out in the middle. all that extra goodness probably diluted the flavor because the filling itself was a little bland (despite adding a teaspoon of salt and more than half a stick of salted butter), leaning more to the sweetness spectrum because of so much potato starch. i boiled the potato with the chicken breasts but the potato was finished before the chicken was done so i had to take everything out and reboil the chicken before shredding it. i used pilsbury readymade crust which has a nice saltiness to it, but the filling was too liquid so each slice was a mess and you either got a bite of filling or crust both rarely both. i also didn't do a good job crimping the edge of the pie, i just sort of mashed it, but nothing leaked out fortunately. but boy was this pie satisfying! potato mixed with chicken with that crust and milk and butter and a bit of mixed vegetables. great to make on a cold night when you're hungry. now that i know the basics of making savory pies, i could try making other pies.
